This restaurant is located in the North of the city, in the Aristos hotel. Its modern decor is very appealing. The dining room is olive green with a large skylight in the middle and the kitchens, which can be seen, are at the back of the restaurant.
The chef, businessman and hotel manager Juan Pablo Felipe won the National Prize for Gastronomy in 2001 (the restaurant has received endless prizes in the past). Today he is one of the most successful architects of creative and innovative cuisine in Madrid. Originally from Cadiz he has brought with him his knowledge of many local dishes such as ''atún de almadraba'' as well as his interest in wines, sherries and different types of oils...
El Chaflán has one Michelin star. The aperitifs are very imaginative and the menu has some attractive options especially the fish dishes. Everything is prepared using only the best quality ingredients.
