1. Peel the potatoes and boil in salted water for approx 20 mins check that the potatoes
are done then drain and leave to cool
2. In a bowl mix the mayonnaise,
chopped parsley and crushed garlic
3. Once the potatoes have cooled
chop them into small chunks (2x2cm)
4. Add the potatoes to the garlic
mayonnaise and mix well
5. Leave in the fridge for 30mins before
serving at room temperature

Very important
not to overboil the potatoes otherwise they will become mushy when you cut them
up into chunks. They should be cooked but firm, so keep checking by piercing with
a fork
- Don't use this tapas recipe for a romantic meal (unless
you are both lovers of garlic of course!).
