Spanish artichoke recipe: Fried artichokes

Spaniards eat artichokes by the kilo, and when you have tasted the delicate flavour of this original vegetable and discovered its nutritional qualities, it isn't difficult to understand why. There are many different artichoke recipies - steamed, baked, stuffed, grilled. This is one of the easiest on offer.
Basic ingredients:

  • 4 artichokes
  • olive oil
  • salt
  • 2 cloves of garlic
  • a few slices of Serrano ham (optional)
  • lemon juice
Steps to making Spanish fried artichokes:

 







 
 



 





 

 





 
 


1. Prepare the artichokes by removing the outer layers leaving only the tender middle part - cut of the rough stalk part

2. Slice the artichokes so that the pieces are very fine

3. Heat some olive oil in a frying and add the thinly sliced pieces of artichoke together with the garlic also thinly sliced

4. Fry the artichoke quickly making sure it doesn´t burn - drain off any excess oil by placing on kitchen paper

5. Finally put the sliced artichoke in a serving dish and sprinkle with a little lemon juice and season with salt

 

Tips and Ideas:

  • Add some fried serrano ham cut into small pieces before serving - you can also use bacon in the same way
  • Cook the artichokes as soon as they are chopped, otherwise they will go brown. You can then keep them warm in the oven until you are ready to serve.
  • Artichokes are also delicious raw. Prepare them as in steps 1 and 2 of this recipe and add the slices to a green salad with a dressing made of olive oil and lemon juice.
