1. Prepare the salt cod by soaking it overnight (12 hours) and changing the water
several times
2. Once you have soaked the salt cod cut
it into large pieces and remove any scales or bones
3. Place the oil and sliced garlic in an earthenware casserole dish and heat slowly
then add the cod and cook over a medium heat for about 20 mins
4. Fry the chopped bacon for a few mins then add the onions, parsley and paprika
and fry for a further 20 mins
5. Add the peeled, chopped
tomatoes to the bacon and onion and cook for a further 15 mins -season with salt
and pepper
6. Pour this mixture over the cod in the casserole
dish and cook slowly over a low heat for a further 20 mins moving the dish from
side to side to prevent sticking - add more liquid if the sauce gets too thick.
